Krásne červené papriky sú dominantou leta. Ich výrazná farba je spôsobená veľkým množstvom flavonoidov, čo sú dôležité antioxidanty. Paprika okrem toho obsahuje niekoľkonásobne viac vitamínu C než citrusové plody.

 

Červené papriky umyte, nakrájajte pozdĺžne na polovicu a vyberte z nich semienka. Polovice paprík rozložte na plech vystlaný papierom na pečenie a pečte v rúre na 200 °C približne 20 minút dozlatista.

Upečené papriky nechajte vychladnúť a potom ich zbavte šupky. Vďaka predošlému pečeniu by to malo ísť pomerne jednoducho.

 

Potom si ošúpte zemiak a nastrúhajte ho na hrubom strúhadle. Ďalej si na kvapke rozpáleného olivového oleja vypražte narezaný cesnak a cibuľu, pridajte ošúpané pečené papriky, nastrúhaný zemiak a zalejte domácim zeleninovým vývarom. Ak nemáte vývar, postačí vám voda. Varte na miernom ohni asi 10-15 minút.

 

Na záver celú zmes rozmixujte na hladký krém, okoreňte soľou, čiernym korením a balzamikovým octom.

Na tanieri ozdobte čerstvou bazalkou a podávajte.
