Zemiaky1 g
Bazalka čerstvá1 hrsť
Olej olivový10 ml
Cibuľa červená1 kus
Paprika červená3 kusy
Soľ1 štipka
Čierne korenie1 štipka
Zeleninový vývar300 ml
Ocot balzamikový3 g

Červené papriky si umyte, pozdĺžne prerežte na polovicu a vyberte z nich jadrovník so semienkami. Polovice paprík rozložte na plech vyložený papierom na pečenie a pečte v rúre pri 200°C približne 20 minút.

Upečené papriky nechajte vychladnúť a potom ich zbavte šupky. Vďaka predošlému pečeniu by to malo ísť pomerne ľahko.

 

Potom si olúpte zemiak a nastrúhajte ho na hrubom strúhadle. Na kvapke olivového oleja si osmažte nasekaný cesnak a cibuľu, pridajte olúpané pečené papriky, nastrúhaný zemiak a všetko zalejte domácim zeleninovým vývarom. Ak nemáte vývar, postačí vám voda. Varte na miernom ohni asi 10-15 minút.

 

Na záver celú zmes rozmixujte do hladkého krému, osoľte, okoreňte čiernym korením a ochuťte balzamikovým octom.

Na tanieri ozdobte olivovým olejom, čerstvou bazalkou a môžete podávať.
